After all, it's hard to get enough veggies into your diet. My recipes are designed with busy home cooks in mind, focusing on meal prep and work-ahead strategies to lighten your workload at dinnertime. I avoid prepared ingredients whenever possible, opting instead for more budget-friendly, whole produce that you wash and chop yourself. In fact, I always set aside a weekend afternoon to process all of my raw produce, par-cooking when necessary and freezing the produce I won't use right away.
