    Currently at Flipped-Out Food...

    The air is crisp and chilly here in Wisconsin USA, and the leaves have reached their full, riotous peak color. It's time for hot apple cider, fluffy pajamas, flannel sheets, and flames crackling in the fireplace.

    UPDATE: It SNOWED last night. That's right. Mid-October.

    Although I'm not prepared yet for the full onslaught of winter, I do adore everything about Autumn.

    The kids are back in the full swing of school, and that means we're in full Kid Taxi mode, with dropoffs and pickups for school—then more dropoffs and pickups for practice. On busy midweek nights like these, I rely on an arsenal of dinners that can be ready in short order.

    In fact, this seemed like the perfect time to share my tips for Mastering Easy One-Pot Meal Recipes. I've made at least one of these meals per week since school started! I'm also sharing my newest addition: One-Pot Buffalo Chicken Macaroni and Cheese.

    This week's #CookBlogShare theme

    Last week's #CookBlogShare, hosted by Monika of Everyday Healthy Recipes, had a wonderful selection of recipes to choose from. This one-pot bender I've been on has me on the lookout for other recipes that come together quickly, so I decided upon main dishes that come together in about 45 minutes. And so, I give you 4 main dishes under 45!

    First up is this gorgeous Carrot and Ginger Soup with Marmite Croutons from Corina at Searching for Spice. With her delicious recipe, Corina blows the average carrot soup out of the water by adding umami bombs in the form of Marmite croutons. Beyond that incredible umami flavor, these croutons add a much-needed textural contrast to the delicious, smooth puréed soup.

    Next is Pressure Cooker Beef Curry by the lovely Eb at Easy Peasy Foodie. It's hard to believe that you can make a gorgeous, flavorful curry in just 40 minutes, but that's exactly what Eb has done by employing her pressure cooker (and new favorite toy: also check out her review for the Prestige Smartplus Pressure Cooker).

    Next, Neetu over at Simple Gluten Free Kitchen brings us Gatte Ki Sabzi, a curry made with gram flour dumplings (this faintly reminded me of gnocchi in Italian cuisine). I'm excited to try this recipe because not only does it include fenugreek leaves, but also ajwain—I bought my first jar of these seeds this week, so I know the first recipe I'll be using them in! This vibrant curry is gluten-free and vegetarian.

    The final dish of our 4 mains in 45 theme is Vegan Lentil and Vegetable Hotpot by Midge at The Peachicks Bakery. This dish began its life as a recipe from Hello Fresh, which Midge recreated at home and then made her own. Although it doesn't quite fit into the "45 minutes" theme, you can meal-prep most of the ingredients in advance (even the day before), which leaves you 40 minutes of cooking before dinnertime. This recipe is vegan and offers allergy-friendly options.

I can't believe you've had your first snow already. Here in the south east of England it has been unusually warm for the time of year - 20 degrees C (about 70F)!       I cannot believe you already had your first snow! It's been so unseasonally mild in the UK this October that I'm starting to get slightly confused as to what season we are in! Delicious round up by the way with some lovely and quick dinner ideas that will definitely come handy! 🙂
