Combine ingredients for the strawberries in an airtight plastic container. Refrigerate until use.
Add 3/4 cup Greek yogurt to a bowl. Top with 1/2 cup of macerated strawberry mixture. Drizzle 1 tbsp of maple syrup over the top. Serve.
WORK-AHEAD: I always make the macerated strawberries in advance. They make a fantastic topping for waffles and pancakes, too!
